
Creamy Lemon Pepper Veggies Recipe
It’s my go to when I realize my dinner plans are a carb fest and I am looking for a quick vegetable side dish. It’s also a good one when you have a little bit of a few different veggies but not enough of one for one dish. Just throw them together and viola!
You could add any seasoning you’d like, too. I’m a sucker for lemon pepper. I’ve also tried it with ranch powder and that is yummy too! This makes an excellent side dish for a fast home cooked dinner!
Creamy Lemon Pepper Veggies Recipe
Ingredients
- 1 lb. Peeled Baby Carrots
- 1/2 lb. Broccoli Florets
- 4 T. Plain Non-Fat Yogurt
- 3 T. Lemon Pepper Seasoning
- Salt to Taste
Instructions
- Boil the baby carrots and broccoli until tender. Let cool 10-20 minutes. Add yogurt, lemon pepper and salt and stir.
- As most of my recipes will go, this is one that is easily modified. Example: use Greek yogurt instead of regular, use any veggies you'd like, add as much here or there as you'd like. This is a great way to fancy up veggies in a low cal way.
